Annatto 50 ml - Mad Millie
Annatto-50 ml is a natural colorant, extracted from the seeds of the Achiote trees. This is used to create the yellow or orange colour in cheeses. Sometimes, it is used in some boutique blue cheeses for colour contrast.
The quantity depends on the colour intensity required. However, as a guide, use between 0.1 and 0.5 ml per litre of warmed milk, before adding culture or rennet. Since this is a natural product, colour intensity may vary from lot to lot.
